Oat Tortillas (FTDI)

Ingredients:

Women: 2oz homemade Oat flour

Men: 3oz homemade Oat flour

1 REAL Egg White (not boxed for best results)--EGG WHITE OPTIONAL

Water until runny consistency (runnier than pancake batter--more like crepe batter)

Instructions:

1. Turn your raw, whole oats portion into oat flour by putting them in a food processor/blender until

flour consistency for homemade oat flour.

2. Add 1 REAL egg white and stir the oat flour and egg white together with a fork to create a paste (this step is optional).

3. Add water until it’s a runny consistency (thinner than pancake batter).

4. Ladle the mixture into a HOT pan or griddle (use a little spritz of Pam if necessary) in a corn

tortilla shape and size using the bottom of your ladle to spread the batter in a circle shape (for

best results try to pour ALL tortillas at once instead of one at a time).

5. Wait until one side is cooked well and flip!

6. For more of a tortilla like texture, grill them over the open flame on the stovetop.

****Portion and serving info: Eat however many tortillas you make with this recipe because that will equal one carb portion. For tostadas, chips, tortilla strips, taquitos, bake them in the oven at 350° until crunchy—be patient they will get crunchy!***

Recipe Q and A:

Q: What kind of Oats should we use?

A: Any kind of Oats that are NOT quick or instant. For FTDI friendly Oat Tortillas use Steel Cut, Rolled, or Coach's Oats.

Q: How do I make Oat flour?

A: Place raw, whole oats in a food processor or blender (I use a Vitamix and it works great) until they become a flour consistency. A coffee grinder works well too! **See my how-to video below!

Q: Can I make a large batch of these tortillas for meal prep?

A: YES, however, to get best results, make ONE BATCH at a time otherwise the batter will become too thick.

Q: Does I have to put an egg white into this recipe?

A: The egg white is optional. It does make the tortilla stronger and doesn't fall apart as easily. Some people like the oat tortillas with it and some don't mind it without it!

Q: If I use egg white does the egg white have to be from a real egg?

A: I get better tortilla texture and consistency with real egg whites for this recipe rather than boxed. However, you can try boxed and see how you like it.

Q: If I use egg white do I have to count the egg white as part of my protein portion?

A: You can if you want to but I never have because a tad extra protein will not hinder your weight loss results. If you want to count it then one egg white is aporox 1oz.

Q: How do I store my Oat Tortillas?

A: I store mine in a Ziploc bag in the refrigerator for a couple days. If it will be more than 2 days then I freeze them in a freezer ziploc bag. To reheat them it's best to do it over an open flame, in a skillet, or on a griddle.

Q: What if my tortillas are too thick like pancakes?

A: You need to add more water for a runnier batter consistency if your tortillas are too thick. They should be similar to corn tortilla in size, shape, and thickness.

Q: What if my tortillas have little holes all over them?

A: Then your griddle or pan is TOO hot! Turn down your heat and you won't get little holes all over them.
