5 "Cinco de Mayo" Healthy Choice Recipes by MMJ


I know that lots of us love to eat some yummy food when Cinco de Mayo comes around so here is a list of 5 yummy and HEALTHY options that will keep us on track on our journey to health while enjoying our celebrations! <3 MooMoo Jackson

#5 Spanish Brown Rice (FTDI)

OR Green Chile Brown Rice (FTDI)

OR Cauliflower Spanish Rice [GRAIN FREE] (NOT FTDI / Yes Clean Eating)

#4 Veggie Tortilla Soup (Clean Eating)

NOTE: To make this soup FTDI, just use green and red salsa (2 cups of each color) in place of green and red enchilada sauce, use only FTDI Veggies, and add raw Chicken Breast to the soup before you start cooking. Also, add some FTDI crunchy oat tortilla strips on top (just cut up and bake homemade FTDI Oat Tortillas).

#3 Turkey Albondigas (FTDI)

#2 Tacos, Tostadas, Taquitos, Chips (FTDI / Clean Eating)

Start by making either my FTDI Oat Tortillas, my clean eating (not FTDI) Brown Rice Tortillas, OR my clean eating Vegan (not FTDI) Quinoa Tortillas then either eat them as soft tacos, or bake them at 350 until they are crunchy for Tostadas or Hard Shell Tacos (see my picture below for a quick easy way to make hard shell tacos). For taquitos, roll cooked chicken and spinach in the tortillas then bake them at 350 until crunchy. You can even use an Air Fryer if you want! For chips, cut the tortillas you make into triangles and bake!
