Sweet Potato Brownies (FTDI)


FTDI Sweet Potato Brownie

WHO WANTS FTDI SWEET POTATO BROWNIES????

Don't knock it until you try it because they are actually yummy, especially when you are trying to take off weight and you really want a brownie! They have the texture and feel of a brownie and the chocolate taste comes from protein powder. Try it! You'll see!!

SWEET POTATO BROWNIES (FTDI)

MooMoo Jackson Style

Ingredients:

10oz COOKED Sweet Potato OR Yam (approx. 1 medium size)

2oz homemade Rolled Oat Flour

2 scoops MyoFX Chocolate Protein Powder

1/4 tsp Pink Himalayan Sea Salt

1 tsp Baking Powder

1/2 tsp 100% Pure Vanilla Extract

2 REAL Egg Whites (not boxed)

1/4 cup Walden Farms zero calorie Pancake Syrup

3/4 cup BREWED Black Coffee (room temp, not instant)

Instructions: PREHEAT OVEN TO 350 degrees

1. Place one med sized sweet potato with skin ON in the microwave on high for 7 minutes (don't poke holes, no need to cover).

2. Let sweet potato cool to touch, peel off skin with fingers (it'll come right off easily), weigh 10oz of COOKED sweet potato, then blend it in a food processor/blender until SMOOTH (no lumps).

3. In their own bowl, whisk the egg whites to fluff them up a little (do not beat them), then combine them, along with all other WET ingredients (EXCEPT FOR THE BREWED BLACK COFFEE) into the pureed sweet potato by mashing them together with a fork.

4. In a separate bowl combine ALL the DRY ingredients well then add the dry ingredients to the wet ingredients and mash everything together with your fork.

5. Pour the room temp BREWED black coffee into the mixture and stir to combine (don't over mix the batter).

6. Pour the batter into a 9x9 baking dish sprayed lightly with zero calorie non-stick cooking spray and bake at 350 degrees for 25-35 minutes (until the middle is not mushy).

Portion Info: This recipe is 12oz of carbs total. Do not weigh these. Just divide them evenly into your correct portions. Women need to cut the entire batch up into 6 pieces (and only ONE will be an individual carb portion). Men need to cut the entire batch up into 4 pieces (and only ONE will be an individual carb portion). [Carb portions: Women--2oz, Men, 3oz] There is not enough protein in them to count as a full protein portion.

RECIPE Q&A's:

Q: Can I use Steel Cut Oat flour or Coach's Oat flour in this recipe?

A: You can, however, I find that using rolled oats for baked goods gives best results so that is why I use rolled. You can use other oats but this recipe won't work with quick or instant oats.

Q: Does it matter if I use a sweet potato or a yam?

A: No. You can use either. I use the white one because I like for it to look more like a brownie and the white one picks up the brown of the chocolate protein powder.

Q: Can I use a different flavor protein powder?

A: Yes. You can use any flavor you want to. It'll change the flavor of it being a brownie but it'll still be a tasty cake-ish treat if you use a different protein powder flavor. Actually, this recipe is yummy with Chocolate Peanut Butter protein powder!

Q: I don't like coffee! Can you taste it in this recipe? Is there a substitute for it?

A: You cannot taste the coffee at all in this recipe! It is used to enhance the flavor and for a richer brownie color. There is no substitute for it. You can use decaf coffee if you are sensitive to caffeine. If you are allergic to coffee you can try using water in it's place but just know that it will come out different than it is supposed to (different color and flavor).

Q: Can I make these without the protein powder?

A: Not for FTDI purposes. The chocolate protein powder is what gives the brownie it's chocolate! This recipe won't work with VEGAN protein powder (I tried it).

Q: Do I have to use REAL egg whites or can I used boxed egg whites? What if my boxed egg whites say "100% real egg whites?"

A: For best results (taste, texture, consistency) you need to use REAL egg whites from an actual egg, NOT from a box (even if the box says it's 100% real egg whites). Boxed egg whites have a different consistency than egg whites from actual eggs and they don't work well in baked goods. If you know that and you still want to try it then by all means!

Q: I don't like the taste of sweet potato or yams! Can you taste them in this recipe?

A: No! You cannot taste sweet potato or yam! It tastes like a healthy brownie. Try it!

Q: Is there enough protein in these brownies to count as my full protein portion?

A: No. The carb portions in this recipe are exact but there is not enough protein in these brownies to be counted as a full protein portion. You'll need to eat additional protein with these. Don't forget your FTDI veggies too!

Q: Can I eat these as a snack (example: instead of or in addition to my protein shake)?

A: NO! If you are FTDI these are NOT for snacking! You cannot eat these in place of your protein shake! You need to count them as a carb portion for one of your full FTDI meals. See my portion info in my recipe for carb portion details!
