Veggie Tortilla Soup (Clean Eating / Vegan)
This Soup is great for a rainy day and ANY DAY!! SO COMFORTING! I made a super simple healthy, vegan, veggie tortilla soup in my crockpot for dinner! Just chop, dump, leave it be! Veggie Tortilla Soup (Clean Eating / Vegan) MooMoo Jackson Style
Soup Ingredients: 1 Zucchini diced 1 Squash diced 2 different color Bell Peppers 1 White Onion diced 6 ribs of Celery chopped 2 Tomatoes chopped 1 14oz bag of frozen FIRE ROASTED corn 1 28oz can Black Beans 1 28oz can of red enchilada sauce (I like Las Palmas) 1 28oz can of green enchilada sauce (Las Palmas) 3 cups water
Soup Seasonings: Pink Himalayan Salt to taste Black pepper to taste Garlic Powder to taste
Soup toppings: Lime wedges Avocado diced Red or Green onion chopped Fresh Cilantro chopped Fat Free Greek Yogurt [Not Vegan FYI] (in place of sour cream and I'M SERIOUS it tastes perfect and you won't miss sour cream, TRUST ME)!!
Instructions: 1) Dump all the soup ingredients and soup seasonings in a lined Crock-Pot (crockpot liners can be found in the Ziploc bags section at the grocery store and make clean up so easy). Note: Drain the black beans just a little but not all the way and leave some bean juice in the can then dump them in. 2) Cook on high for 3-4hrs or on low for 4-5hrs until all the veggies are soft but not mushy. 3) Put all the toppings on and ENJOY!
