MooMoo Jackson Style

Ingredients:

1 1lb package of 1% Ground Turkey AND 1 1lb package of Ground Chicken BREAST

(OR 2 1lb packages Meats2u Ground Poultry Garlic Herb Blend)

1 White Onion diced

5 garlic cloves minced

4-6 Celery ribs chopped

1 deseeded finely diced Jalapeño (optional)

1 cup Chunky Red Salsa (can be store bought and any heat--mild, med, hot to your desire)

1 cup BREWED Black Coffee (can be Decaf if you desire)

4 cups Water

Frank’s Red Hot Original Hot Sauce to taste (approx. 5-10 “glugs” depending on how spicy you like it)

Chili Seasoning Ingredients:

3 tbsp Chili Powder

½ tbsp Garlic Powder

1.5 tbsp Whole Dried Oregano

2 Stevia packets

Pink Himalayan Salt to taste

Black Pepper to taste

Yields: Women: Approx. 6 meals

Men: Approx. 4 meals

Instructions:

1. In a large sauce pan brown the ground turkey/ground chicken combo by itself until it's cooked. IMPORTANT: Weigh your cooked meat BEFORE you turn it into chili so you know how many protein servings you have.

2. Before you put your cooked meat back into your sauce pan, add the diced onion, minced garlic, chopped celery, and deseeded/diced jalapeño into the pot then sauté the mixture until soft (but not mushy).

2. Place the cooked meat back into the pot with the sautéd veggies then add the salsa, brewed black coffee, water, and Frank’s Hot Sauce then stir.

3. Combine all the dry ingredients in a separate bowl (chili powder, garlic powder, oregano, and Stevia, PH salt, black pepper) and mix well then add the chili seasoning mixture to your pot and stir.

4. Bring your chili to a boil. Cover and let simmer on low heat for approx. 30-45mins.

Portion Info: Make sure to follow the instructions in step one (above) of weighing your COOKED meat BEFORE you turn it into chili so that you know how many protein portions you have in your entire pot! Once you have your chili complete then you can evenly split the whole pot into the amount of protein portions you have (which you figured out in step one).

Protein portions: 4oz women, 6oz men.

**FEEL FREE TO ADD ANY OTHER FTDI VEGGIES TO THE POT WHILE BOILING! I love spinach, kale, and shredded Brussel sprouts in it!***

Q: How do I know how many protein servings my pot of chili is?

A: Weigh your cooked meat before you turn it into chili so you know how many protein servings you have. Follow the portion instructions below my recipe.

Q: What if I don't like coffee?

A: In this recipe you cannot taste the coffee at all. It is used to enhance the flavors and to give it more of a chili color (since we also eat with our eyes). You can use decaf if you are sensitive to caffeine. You can also chose to leave it out if you have a coffee allergy--just replace that measurement with water. Without it just know the flavor won't be as rich and it will look a little watery. It's still doable, however, with the coffee it's best!

P.S.--THIS RECIPE WON'T WORK WITH INSTANT COFFEE! It has to be brewed. :)

Q: Is Salsa FTDI? Can I use it in this recipe if I'm in the 6wk challenge at The Camp?

A: Salsa /Pico de Gallo IS FTDI in moderation (check your Condiments and Drinks page in your FTDI Bible). It can be homemade or store bought, thick and hearty or pico de gallo, red or green! YES, you can put the salsa in this recipe if you are a challenger!

Q: What Salsa should I use? Is salsa FTDI?

A: Salsa IS FTDI in moderation (check your Condiments and Drinks page in your FTDI Bible). You can use any brand CHUNKY RED salsa for this recipe. If you are trying to follow FTDI then make sure there is no oil or sugar in the ingredients of your salsa. I've noticed that using homemade salsa doesn't give this recipe the right consistency, although, if you'd like to try that then go right ahead!

Q: Is this Chili spicy?

A: This chili is mild if you follow my recipe. You can make it spicier or milder if you'd like. Ways to make it spicier are to use spicier salsa, more diced jalapeño, more Frank's Red Hot sauce, or you can even add crushed red chili peppers. You can also make it even milder if that is how you like it by eliminating jalapeño and hot sauce, and using a very mild salsa.

Q: Do I have to use both ground turkey AND ground chicken breast?

A: You do not HAVE to use both but I will tell you that when you combine them 50/50 your meat will be much more moist! Ground turkey by itself is usually dry and difficult to eat. I like to eat meat that is moist and not dry! It will work with just one kind of meat though.

Q: What's Meats2u?

You can purchase their meat online at meats2u.com or at any Camp Transformation Center location with a Meat2u freezer on site. They sell a ground poultry (plain or pre-seasoned) that is already 50/50 ground turkey and ground chicken breast (and many other healthy meats). It's delicious, convenient, and has many health benefits as well!
