2 Ingredient Sweet Potato Flat Bread (FTDI)
This recipe is different than my FTDI Oat Tortillas. It's flat bread, similar to pita bread, naan, or roti. I use it like a wrap as well. It's simple with only 2 ingredients and tastes great!

2 Ingredient Sweet Potato Flat Bread (FTDI)

Ingredients (ONLY TWO!):
1 cup COOKED Sweet Potato (approx. 1 large size)
1 cup homemade Oat Flour
Instructions: IT'S EASIER THAN IT LOOKS, I PROMISE!!
1. Place one large sweet potato with skin ON in the microwave on high for 7 minutes (don't poke holes, no need to cover).
2. Once it’s cooled to touch, peal the skin right off of it with your fingers—it should come off easily! Then mash the sweet potato in a bowl using a fork until it is very well mashed (no lumps).
3. Combine only ONE cup of the mashed sweet potato and one cup of homemade oat flour using your fork, continuing to mash it all together until it becomes a little doughy.
4. Take the “dough” out of the bowl, place it on a large area (sprinkle area with a little oat flour so it doesn’t stick) and gently kneed the “dough.” It’ll become more like dough in this stage. Don’t get it too dry with too much extra oat flour. It shouldn’t be too sticky or too dry.
5. Roll/form your dough into a log shape and then weigh it on your food scale. My dough roll weighed 12oz so I cut my dough log into 6 even pieces (2oz pieces each because I’m a woman and that equals one portion…….if you’re a man cut your pieces into 3oz pieces or do 2oz pieces and eat one and a half for one serving).
6. Roll out each piece of dough between parchment paper sprayed lightly with Pam (so it doesn’t stick) with a rolling pin keeping a circle shape. Roll dough thin but not too thin.
7. Place your flat bread in a HOT cast iron pan (cast iron for best results). Allow it to cook on both sides (it will get a little puffy here and there and that’s good!) No non-stick spray is needed in the pan!
8. Place your flat bread directly into a container in between a towel so it doesn’t dry out before eating them and finish the rest of the dough pieces.
Portion info: If you followed my instructions in step 5 then ONE flat bread will be one carb portion. Fill them with whatever FTDI protein and veggies you want!
**I LIKE TO PUT CURRY CHICKEN ON THESE, MAKE TUNA OR CHICKEN WRAPS, BAKE THEM UNTIL CRUNCHY FOR SOME YUMMY PITA CHIPS, OR EVEN MAKE FTDI FLAT BREAD PIZZA OUT OF THESE! BE CREATIVE!
RECIPE Q&A's:
Q: What type of oat flour should I use? Does it HAVE TO be homemade?
A: If you are FTDI you have to make your oat flour homemade. You can turn any FTDI oats into flour (steel cut, rolled/old fashioned/Coach's) in a food processor/Vitamix. Don't use instant or quick oats.

Q: Does it matter if I use a sweet potato or a yam?
A: No. You can use either. The results won't differ.
Q: What if I do not have a cast iron skillet?
A: I get best results using a preheated cast iron skillet for cooking these. If you do not own one you can try to use a hot skillet or griddle instead.
Q: Do I weigh my flat bread after it's cooked for carb portion?
A: No. Do not base your carb portion off of weighing your flat bread after it's cooked. You need to follow step #5 in my recipe above closely to make sure you are consuming the correct carb portion when eating these.
