Chicken Apple Sausage (FTDI)
These sausages are a different flavor and are just what I needed when I came up with this recipe! I was going for the typical Chicken Apple Sausage flavor but when using only FTDI ingredients it got tricky! But I created a pretty yummy Chicken Apple Sausage! Hope you like it!
Chicken Apple Sausage (FTDI)

Ingredients:
1 1lb package Ground Chicken Breast
1 egg white
1.5 tsp Apple Pie Spice (found in the spice aisle at grocery store)
1/2 tsp Ground Sage
1/2 tsp dried Rosemary leaves
1/2 tsp Anise Seed
1 packet Splenda (approx 1/2 tsp)
Instructions:
1. Combine all seasonings in a bowl and stir then set aside.
2. In a separate bowl squish together ground chicken breast and egg white then dump the bowl of seasonings in and mix it all together well with your hands making sure to combine it all evenly.
3. Separate the seasoned ground chicken into 3 sections (doesn't need to be 100% just eyeball your 3 sections) and roll each section into "sausage logs."
4. Preheat a skillet (I used a cast iron skillet) on medium/high heat then right before you put the sausages in the pan spray some Pam (zero calorie non-stick cooking spray) in the skillet, add the sausages and cook them on all sides (approx 10-12 minutes total in the pan). DO NOT OVERCOOK your sausages or they'll be too dry! Cut them up and ENJOY!
Portion Info: Weigh the cut up sausage after it's cooked for your protein portion, 4oz women, 6oz men.

Q: What kind of ground chicken should I get? Where can I buy it?
A: Make sure you use only ground chicken BREAST. Often times ground chicken will have other parts of the chicken ground in with it which wouldn't be FTDI. If you have an attachment to your KitchenAid at home then feel free to simply grind up boneless, skinless chicken breasts yourself. You can also do it in high tech blenders (such as a Vitamix) by pulsing the chicken breast until it's pulverized. If not then you can purchase already ground chicken breast at Stater Brothers, Trader Joe's, Clark's Nutrition, or other Whole Foods stores. The butchers at meat markets will do it for you often times too.
Q: What is Apple Pie Spice and where can I buy it?
A: Apple Pie Spice is a blend of cinnamon, nutmeg, allspice, cloves and cardamom. It's typically used in pies and baked goods but I decided to use it in this recipe to pull the "apple pie" flavor into the sausage since we can't have ACTUAL apples when FTDI. It worked out pretty well! You can buy it in the spice aisle at any Grocery store. Here is a picture of it:
Q: Are these sausages dry?
A: Ground chicken can be on the dry side of meats. Do not overcook them if you do not want them to be dry. Just like whole chicken breasts, if you cook them wrong they'll be dry but if you cook them correctly then they can be moist!
Q: How should I store these? Can I freeze them?
A: I store mine in a Ziploc bag in the refrigerator or freezer. They freeze and reheat ok but I prefer reheating them in a skillet instead of the microwave so they don't become too dry.
