Spicy Greek Seasoned Chicken and Veggie Kabobs (FTDI)

Spicy Greek Seasoned Chicken and Veggie Kabobs (FTDI)

Skewer Ingredients:

2lbs Chicken Breast diced

Brussels Sprouts sliced

Salsa ingredients in larger chunks (tomato, onion, jalapeno)

1 package of Wooden Skewers

Spicy Greek Marinade Ingredients:

1/3 cup Jalapeno Deli Style Mustard (zero calories, purchased at Stater Brothers)

1 tbsp McCormick Greek Seasoning

Instructions: MARINATE CHICKEN FOR APPROX 6-24 HRS PRIOR TO GRILLING!

1. Cut raw Chicken Breast into one inch pieces (perfect for skewers), place them into a large Ziploc bag and add the Jalapeno Mustard and Greek Seasoning to them. Zip the bag shut and move the Chicken pieces all around to make sure all the pieces are coated evenly with the marinade.

2. Refrigerate and marinate the raw chicken, mustard, and seasoning for AT LEAST 6 hours but up to 24 hours).

3. When you're ready to grill your meat, take it out of the fridge and place the chicken pieces onto the skewers. NOTE: Soak the wooden skewers in water for approx. 15 minutes prior to pacing the chicken on them so that they don't burn on the grill.

4. Make Veggie skewers as well with the Brussels Sprouts and Salsa ingredients in large chunks. Sprinkle some Greek Seasoning on the veggie skewers.

5. Grill the skewers on med/high heat for approx. 5 minutes on each side (both chicken and veggies) or until cooked through. I used my BBQ.

Portion Info: Pull Chicken off the skewers to weigh your COOKED meat (women 4oz, men 6oz) . You can also weigh your wet stick prior to loading it with chicken and minus the stick's weight from an entire skewer when weighing your COOKED skewer.

Q: Are the salsa ingredients cut in larger chunks FTDI in this recipe? Can I use them in this recipe if I'm in the 6wk challenge at The Camp?

A: Salsa /Pico de Gallo IS FTDI in moderation (check your Condiments and Drinks page in your FTDI Bible for that info). It can be homemade or store bought, thick and hearty or pico de gallo, red or green, cut small or chunkier. YES, you can use the salsa/pico de gallo ingredients in this recipe if you are a challenger!

Q: Are tomatoes FTDI?

A: Tomatoes are not on the approved FTDI food list. HOWEVER, Salsa IS FTDI in moderation. See your Condiments and Drinks page in your Bible for info. So, you are allowed to use salsa ingredients in this recipe and still remain FTDI.

Q: Are onions FTDI? Are we allowed to eat cooked onions during our 6wk weight loss challenge at The Camp?

A: Yes. Onions are FTDI. You are allowed to eat them raw OR cooked during your 6wk challenge. See your Condiments and Drinks page in your Bible for info. Remember that onions are considered a CONDIMENT and should be used as a condiment, not as a main course or a side dish. They are higher in sugar so eating an excessive amount can hinder your weight loss but they are FINE if eaten properly. The amount of onion in this recipe is okay for challengers!

Q: Is Jalapeno Mustard FTDI for 6wk Challengers? Where can I purchase it?

A: As long as you chose Jalapeno Mustard that is ZERO CALORIES then YES it is FTDI for 6wk Challengers! Zero Calorie condiments are FTDI (check your Condiments and Drinks page in your FTDI Bible for that info). I purchase mine at Stater Brothers (Stater Brothers Brand) because that is the one I've found that is zero calories and it tastes GREAT! See a picture of it above.
