Breakfast Sausage (FTDI)


This breakfast sausage recipe takes ordinary, bland ground turkey and turns it into flavorful, yummy sausage links that taste like breakfast for ANYTIME of the day! You won't be disappointed making these!

BREAKFAST SAUSAGE (FTDI)

MooMoo Jackson Style

Ingredients:

1 package 1% Ground Turkey (approx. 1lb)

1 package Ground Chicken Breast (approx. 1lb)

(OR two 1lb packages of Meats2u Ground Poultry Unseasoned or Garlic Herb Blend)

1.5 tbsp Walden Farms zero calorie Pancake Syrup

Sausage Seasoning Ingredients:

2 tsp Pink Himalayan Salt

1.5 tsp Ground Black Pepper

1.5 tsp Ground Sage

1.5 tsp Ground Thyme

1.5 tsp Dried Marjoram

1/2 tsp Crushed Red Pepper Flakes

Instructions:

1. Preheat your Electric griddle to 350 degrees or allow your skillet to get HOT before cooking the sausage.

2. In a large bowl, combine the ground turkey and ground chicken well using your hands.

3. Combine all the dry ingredients in a separate bowl and mix well with a spoon.

4. Pour the Walden Farm's syrup and the dry ingredients mixture into the bowl of meat and combine WELL with your hands (make sure to really mix it all up very well so the seasonings are even throughout the meat).

5. Once combined you can make them in to breakfast sausage patties using your hands (whatever size you’d like), or you can roll them in to sausage link shape, or what I like to do is put the meat in a piping bag (that you’d use for frosting a cake) and cut the tip off at the width I’d like my sausage to be then literally pipe the sausage out of the piping bag onto my hot griddle (or pan). I use a pair of kitchen scissors to cut the links at the length I want while I’m piping them.

6. Grill the sausage on all sides until fully cooked through. Don't overcook them so they aren't dry.

Q: Are Walden Farms products FTDI? Where can I buy them?

A: Yes! As long as it is a zero calorie condiment it is FTDI. See your Condiments and Drinks page in you Camp Bible for info. I buy WF products at Stater Bros, Trader Joe's, Sprouts, Clark's Nutrition, or online.

Q: Does the Walden Farms Pancake Syrup taste good??

A: I personally think the pancake syrup is their best tasting product. Some like Walden Farm's and some don't. Try for yourself!

Q: Do I have to use Walden Farm's zero calorie Pancake Syrup in this recipe?

A: You don't HAVE to but it does add a little more moisture to the meat and gives it a slightly sweet flavor (but not overbearing, just enough)!

Q: Do I have to use a combo of both ground turkey AND ground chicken or can it be one or the other?

A: You do not HAVE to use both but I will tell you that when you combine them 50/50 your meat will be much more moist! Ground turkey by itself is usually dry and difficult to eat. I like to eat meat that is moist and not dry! It will work with just one kind of meat though.

Q: What is Meats2u?

A: Meats2u is a company that provides healthy, non-toxic, antibiotic/hormone free, organic meat to the public. You can purchase their meat online at meats2u.com or at any Camp Transformation Center location with a Meat2u freezer on site. They sell a ground poultry (plain or pre-seasoned) that is already 50/50 ground turkey and ground chicken breast. It's delicious, convenient, and has many health benefits as well!

Q: Are these sausages dry?

A: Ground turkey is usually on the dry side of meats. However, combining it 50/50 with ground chicken breast helps make it less dry. These are definitely turkey breakfast sausages but this recipe makes them not too dry and they're actually yummy!

Q: How should I store these? Can I freeze them?

A: I store mine in a Ziploc bag in the refrigerator or freezer. They freeze and reheat ok but I prefer reheating them in a skillet instead of the microwave so they don't become dry.

Q: What kind of ground chicken should I get? Where can I buy it?

A: Make sure you use only ground chicken BREAST. Often times ground chicken will have other parts of the chicken ground in with it which wouldn't be FTDI. If you have an attachment to your KitchenAid at home then feel free to simply grind up boneless, skinless chicken breasts yourself. If not then you can purchase already ground chicken breast at Stater Brothers, Trader Joe's, Clark's Nutrition, or other Whole Foods stores. The butchers at meat markets will do it for you often times too.

Q: What kind of Ground Turkey should I get? Where can I buy it?

A: I like to buy Jennie-O ground turkey (blue package). It needs to be 1% fat (99% fat free) in order to be FTDI. I buy mine at Stater Brothers, Target, Trader Joe's, Sprouts, or Clark's Nutrition. You can purchase any brand as long as it's 1%. Here is a picture of it:
