Oatmeal Cookie Balls (FTDI)
These are delicious and great for on the go! You don't have to eat oatmeal as oatmeal! You can be creative and make other things with your oatmeal.....like cookie balls! :)
OATMEAL COOKIE BALLS (FTDI)
MooMoo Jackson Style
Dry Ingredients:
1 cup whole ROLLED Oats (3oz)
3/4 cup Homemade Oat Flour (3oz)
1 tsp Cinnamon
1 tsp Pumpkin Pie Spice
1/4 tsp Pink Himalayan Salt
1.5 tsp Baking Powder
Wet Ingredients:
3/4 cup Mashed Sweet Potato (6oz)
1/3 cup Walden Farms zero calorie Pancake Syrup
1 tsp 100% Pure Vanilla Extract
3 tbsp HOT Brewed Black Coffee
1/3 cup Water
Instructions: PREHEAT OVEN TO 325 degrees
1. Combine all dry ingredients in one bowl and all wet ingredients in a different bowl.
2. Slowly combine the dry ingredients into the wet ingredients.
3. Roll dough into approx 16-18 balls then place them into a mini muffin tray (so they don't roll around) or on a baking sheet.
4. Bake at 325 degrees for 13mins or until golden brown.
Note: A quick, simple way to make mashed sweet potato is to put one medium sized sweet potato on a plate then into the microwave with skin on (don't poke any holes and don't cover it) for 5 minutes on high. Let it cool to touch then peal the skin right off of it with your fingers (it'll come off super easy).
Portion Info: These are counted only as carbs for one of your FTDI meals (not just for snacking). Weigh your Oats and Oat flour BEFORE adding them into this recipe (before baking) and weigh your mashed sweet potato AFTER the sweet potato is cooked but before combining it into this recipe.
3oz whole Rolled oats + 3oz Oat Flour + 6oz Mashed sweet potato = 12oz carbs for the entire batch. Women should split this entire batch into 6 portions. Men should split this entire batch into 4 portions. Carb portions: Women 2oz, Men 3oz.

Q: What's the consistency of these once they're baked? Soft? Crunchy?
A: A little bit of both. They are crispy on the outside and soft on the inside. I'm big on texture so I made them how I'd want to eat them lol!
Q: Do I have to use coffee in this recipe? I'm allergic!
A: You don't have to. I use it to heighten flavor and give it a little color. You can just use water for that portion plus the other water amount in the recipe as well. For those of you who do not like the taste of coffee--you CANNOT taste it in this recipe. For those of you who are sensitive to caffeine--feel free to use decaf!
Q: Are Walden Farm's products FTDI? Where can I buy them?
A: YES! Zero calorie condiments and seasonings are FTDI. Check your Condiments and Drinks page in your FTDI Bible for details. I buy them at Stater Bros, Albertsons, Trader Joe's, Clark's Nutrition, Sprouts, Whole Foods Stores, or online.
Q: Can you substitute the Walden Farm's Pancake Syrup with just water?
A: You can try it but I used it for consistency in place of oil or butter to make everything stick together. Not sure if it'll turn out the same but it doesn't hurt to try! I think it'll be too runny though.
