Sweet Potato Chips (FTDI)
There's lots of ways to make sweet potato chips but I like mine crispy and salty! I tried a lot of different ways and THIS is how I liked them best!
Sweet Potato Chips (FTDI)

Ingredients:
1 Sweet Potato (or Yam)
Mrs Dash Fiesta Lime
Paprika
Pink Himalayan Salt
Instructions:
1. Preheat oven to 250 degrees F and position oven rack in the center of the oven. 2. Rinse and dry your sweet potato thoroughly and slice it as uniformly thin as possible (leave the skin on). The thinner, the better!
Note: If you have a mandoline slicer, use it! You'll get the best results using a mandolin. Otherwise, use a very sharp knife to get these uniformly thin. Know that chips that are too thick in parts won't crisp up all the way. Still delicious, just not "chip" crispiness. 3. In a bowl, spray the cut potatoes lightly with zero calorie non-stick cooking spray, then sprinkle with the listed seasonings to taste (or any other FTDI seasoning you like) and mix it all up well. 4. Place them evenly on parchment paper on a cookie sheet. Place your cookie sheet in the middle of the preheated oven.
Note: If you have an Air Fryer feel free to put them in it instead of the oven! It'll crisp up your chips nicely as well! 5. Bake them for approximately 2 hours, flipping chips once at halfway point to ensure even cooking. I also rotated mine for more even cooking (optional but recommended). Remove once crisp and golden brown.
Note: Some may feel a little tender in the middle but take them out and let them rest for 10 minutes or so ON THE HOT COOKIE SHEET to crisp up before eating. Serve immediately, and ENJOY!
Portion info: Because you are dehydrating the potato you'll end up eating the entire potato if you weigh the chips once they are cooked. We shouldn't consume an entire potato if we were sticking with our carb portion. The way I eat these is by measuring out a fist sized portion for one sitting (which is another way our FTDI Bible suggests carb portion measurements).

Q: What is a mandoline slicer? Where can I get one?
A: A mandolin is a flat blade that you can run veggies across to cut them thin and uniform. I got mine at Target for approx 20 bucks but you can buy them at any store with a kitchen supply section. Here is a picture of one:
Q: Can I snack on these throughout my day?
A: NO! If you are FTDI these must be counted as your carb portion for one of your meals. See portion info above for how to portion.
Q: Are these good for a second and third day or do they have to be consumed immediately?
A: They are best eaten fresh the same day but it is possible to keep them for a couple days after they are made as long as you store them properly so they do not become soggy.
Q: How should I store these chips? A: To maintain their crispiness, they need to be stored in an air tight container or a paper bag on the counter. Do not put them in a Ziploc baggie or they will get soggy. You do not need to refrigerate them.
Q: What other seasonings can I use?
A: You can use any zero calorie seasoning to remain FTDI.
Q: Have you tried a higher temp for less time? I have a hard time waiting 2 hours?
A: I have tried all kinds of temperatures and times and this process gave me the best results for my liking. I like my chips crispy and salty.
Q: What is an Air Fryer? Where can I get one?
A: An air fryer is a kitchen appliance that allows you to "fry" foods without the use of oil. It helps bring a crispiness to food. You do not have to have one to make these chips--you can use your oven as in my instructions, however, some people like to use it. You can get one at many stores with kitchen appliances such as Target, Kohl's, Bed Bath & Body, Walmart, or even Amazon.com. They range from $70-$200. Here is a picture of one:
