Sweet Potato Noodles (FTDI)
Using a Veggetti or a Spiralizer it's easy to make Sweet Potato noodles! It's worth the effort when you want something that resembles the look and texture of noodles but need a healthy alternative! Just remember these AREN'T noodles lol.....they're spiralized sweet potatoes....but they're still yummy!!
Sweet Potato Noodles (FTDI)

Ingredients:
1 large Sweet Potato (or Yam)
Any FTDI seasoning of your choice
Instructions:
1. Prepare a Veggetti, a Spiralizer, an attachment to your KitchenAid, or a food processor that spiralizes veggies, following the instructions. If you don't have any of those things then you can use a potato peeler and run it down the entire length of your sweet potato to create long sweet potato ribbons.
I used this Spiralizer that I bought at Target for $20 (but any will do) :

2. Wash and dry the sweet potato and leave the skin on for added nutrition and fiber! Then cut both ends off to create flat surfaces to secure the sweet potato in place (if you are using a spiralizer like the one in the pic above). Follow the instructions on the spiralizer you chose to use. For mine, I chose to use the thick spiral blade (green). I've used the ribbon blade too and like that one as well (your noodles will be flat and thick like a ribbon with that blade).
3. Once you spiralize your sweet potato completely, place the entire batch of sweet potato noodles in the microwave uncovered on high for one minute.
4. After you microwave them, place them in a HOT skillet (sprayed with a little Pam), add any FTDI seasoning, and saute them until golden brown. Add your portion of protein and veggies!
Note: Feel free to throw in some diced onion, jalapeno, garlic, cilantro, etc (any FTDI ingredient that can add flavor). Also, you can season them with any FTDI seasoning.
Portion Info: Weigh the sweet potato noodles after they are cooked for an accurate carb portion, 2oz Women, 3oz Men. If you sauteed other ingredients with them then just pull the noodles out of the other ingredients to weigh them cooked then you can scoop the other ingredients back into them once the noodles are portioned out.
