Avocado Toast (Clean Eating)


I had a flood in my house (because my lovely triplet 5 year olds flushed A ROCK down my toilet and caused $$$ in repairs.....GREAT TIMES) and while my house is getting fixed all 6 of us had to move in with my BFF Angela Borruso--so what do we do to deal with that kind of stress?

CREATE HEALTHY AND DELISH FOOD of course!!

This morning's breakfast is avocado toast with Cotija cheese crumble, diced peppers and green onions, and some turkey bacon. It was SO yummy! And we don't feel like CRAP after eating it which is great because whenever we make bad food choices (which is so easy to do when you're in a super stressful situation) it's just so AWFUL to feel so crappy afterwards!

Let's make healthy choices EVEN WHEN life feels so crazy and hectic and things out of your control happen that cost WAY TOO MUCH MONEY that you DIDN'T want to have to spend and when you have four seriously WILD kids that you have to keep from now ruining your BFF's house too! Still. Eat. Well. Stress is NOT a reason to abuse your body! It's a fantastic reason to TAKE CARE of your body!!! Let me just say it's NOT EASY..... It's much easier to handle stress with crap food, but it's NOT WORTH it in the end! I'm serious! We all know how we feel physically, mentally, and emotionally after stress eating. None of the aftermath of that is fun at all!! I'm sick of that feeling! I want to CHOOSE to treat myself better even under pressure! It's a CHOICE! Let's exercise the choice to eat well! WE CAN DO THIS!!!! WE ONLY GET ONE BODY TO MAKE IT THROUGH THIS LIFE, STRESS AND ALL!

This is NOT FTDI! It's for after the challenge! 😁

So, with all that said, here's how I made it:

Avocado Toast

MooMoo Jackson Style

Ingredients:

1/2 avocado sliced

2 tomato slices

2-3 small peppers diced small

Cotija cheese crumbled on top

Green onion chopped and sprinkled on top

Cilantro chopped and sprinkled on top

1 piece of bread toasted (a healthy choice of bread is Ezekiel bread)

Instructions:

1) Toast the bread to desired toasty-ness then layer all the ingredients on top...tomato slices first then avocado and sprinkle on all the other ingredients and ENJOY!

**I had a couple turkey bacon strips along side of my avocado toast!
