Beef Chuck Roast (Clean Eating)

I CONSTANTLY get messages from people asking me for ideas on healthy dinners to make for the whole family to enjoy so here's an idea and it's what's for dinner at my house tonight! My hubby, my 10yr old, and my triplet 5yr olds all love this!

⭐This isn't FTDI but see my notes below for instructions on how to make this FTDI! Otherwise make this for life after the challenge!⭐

Beef Chuck Roast (Clean Eating)

⭐PUT A CROCKPOT LINER IN YOUR CROCKPOT BEFORE ALL THE INGREDIENTS FOR A FAST AND EASY CLEAN UP! Find crockpot liners in the ziploc baggie section at any grocery store!⭐

Ingredients: •2lbs beef chuck roast--I like to buy 100% grass fed, no hormones/antibiotics, organic (trim any fat off)

•1 white onion roughly chopped •3 garlic cloves minced •4 celery ribs chopped •large handful of fresh green beans chopped in half •2 carrots pealed and chopped •approx 10 small red potatoes chopped in 1 inch cubes (you can use sweet potatoes if you want) •2 cups water

Seasonings: 2 tsp ground Sea salt 1 tsp pepper 1½ tsp onion powder 1½ tsp garlic powder 2 tsp parsley flakes 2 bay leaves

Instructions:

1) Place chopped veggies on bottom of lined Crock-Pot and place the roast meat on top of them. 2) Whisk the water and seasonings together in a bowl and then pour it on top of the meat and veggies and add the bay leaves in the juices. 3) Add the chopped potatoes (and I like to sprinkle a little more salt, pepper, and parsley on top of the potatoes). 4) Cover and cook on high for 6 hours. Remove the bay leaves before eating. Enjoy!

⭐To make this same recipe FTDI I like to use boneless skinless turkey breast! You can buy a Butterball boneless turkey breast at Vons or Stater Bros and take the skin OFF of it then follow this same recipe but instead of carrots use zucchini and use sweet potatoes instead of red potatoes. Weigh your meat and potatoes after they are cooked. It's yummy! ⭐⭐⭐
