Low-Carb Banana Blueberry Pancakes (No grains or oats--clean eating)
I made these when I was doing the 21 Day Detox program through The Camp. I'm making them again now that I'm doing the 21 Day Cleanse called The Standard Process (which is NOT Camp related at all). You can make these even if you aren't following a cleanse or detox because they are delish, they're clean eating, and HEALTHY for the whole family! My kids even love these! There are no grains or oats in these pancakes so the only carbs in these would be natural and come from the fruit.
This recipe is NOT FTDI! It's great for life after the challenge!
Low-Carb Banana Blueberry Pancakes (No grains or oats--clean eating)
MooMoo Jackson Style
Ingredients:
1 RIPE banana (has to be getting a little soft and brownish on the peel)
2 Free range pastured whole eggs
1/8 tsp baking powder
1/8 tsp Pink Himalayan sea salt
1/4 tsp vanilla extract
1/4 tsp cinnamon
handful of blueberries
Instructions:
1) Mash all the ingredients together with a fork (except for blueberries) until it is a semi runny consistency then add the blueberries and stir.
2) Ladle mixture onto a HOT griddle. (I used my electric griddle).
3) WAIT A WHILE BEFORE FLIPPING them or else they will become mush and won't work out! It's all about patience! When you think one side is completely cooked (approx 3-5mins) use your spatula to lift a side up to see how the bottom looks and how it feels before you flip it.
4) Flip the pancake carefully and cook on other side until the other side isn't raw then ENJOY!

THESE ARE SO YUMMMY!!! I LIKE TO MAKE A WHOLE BUNCH FOR THE WEEK TO MEAL PREP. I ALSO LIKE TO EAT THEM COLD (AS WELL AS HOT)! DON'T FREEZE THEM, THAT DIDN'T WORK OUT TOO WELL FOR ME BUT THEY'LL LAST FOR ONE WEEK IN THE FRIDGE.
***Make sure to pair this with a protein (account for the eggs in the pancakes) and a veggie (the fruit is your carb)!
