Chicken "Zoodle" Soup (FTDI)
I made FTDI Chicken "Zoodle" Soup tonight for dinner for the whole family and it got GONE!! My hubby, my 10yr old, my triplet 5yr olds, and my BFF enjoyed it and that's what I call SUCCESS! It's PERFECT for these gloomy, rainy SoCal days we're having lately! So comforting! Zucchini and Green Beans are FTDI now! :)

Here's how I make it:
Chicken "Zoodle" Soup (FTDI)
MooMoo Jackson Style Ingredients: •2lbs Chicken Breast cut in LARGE pieces (to better help with portioning in the end) •1 White Onion chopped in quarters •3 garlic cloves finely diced •large handful of fresh Green Beans cut in half •5 celery ribs roughly chopped •1 large zucchini turned into "Zoodles" using a Veggetti or a spiralizer (if you don't have one you can use a potato peeler to still get some sort of "noodle" looking strips) •Water to around an inch above all your ingredients once they're all in the soup pot (if you've made homemade chicken broth and froze it in the past like I do regularly you can also use chicken broth but for FTDI it can't be store bought--see my homemade FTDI chicken broth recipe if you're interested.... If you aren't in a 6wk challenge you can use store bought chicken broth -- I get organic low sodium-- and it heightens the flavor of the soup) Seasonings: Garlic Powder Pink Himalayan Sea Salt Black pepper (All to taste -- be liberal for best results) Instructions: SIMPLE! 1) Place EVERYTHING in a large soup pot EXCEPT the "Zoodles" (zucchini "noodles") and add water (or homemade FTDI Chicken broth) in the pot until approx one inch above all the ingredients. Add seasonings too. 2) Cook on high heat until the chicken breast is cooked through and the veggies are all tender. 3) Spiralize the zucchini and add all the Zoodles to the soup in the LAST 5 minutes of cooking the soup (you don't want them to turn to mush). CARB INSTRUCTIONS: Cook your carb separate to portion it easier! I LOVE my Brown Rice/Quinoa medley a lot with this soup! Portioning Info: 1) Since you cooked the chicken breast in large pieces you can pull the pieces out of the soup and weigh them to be the protein portion you need in each bowl (you can also shred the cooked chicken a little after weighing). 2) Since the Brown Rice/Quinoa mixture was cooked SEPARATE and not IN the soup, weigh out your carb portion and add it to each bowl. 3) Finish by adding scoops of all the veggies and broth you desire in each bowl!! ⭐⭐PERFECTLY PORTIONED!!!⭐⭐
