Split Pea Soup (Clean eating and Vegan)
This soup is so simple and it's HEALTHY and Vegan plus it's yummy and comforting (especially on a cold or rainy day)! It's a crowd pleaser at my house! I don't make separate meals so whatever I'm eating, my triplet 5yr olds, my 10yr old, and hubby eat it too! The entire pot gets GONE when I make this! They loved it! want my kids to learn young why and how to eat healthy foods and take care of their bodies. Their taste buds and their pallets need to be well versed in foods that will bring strength, longevity, wellness, and LIFE to their bodies and it can't start at adulthood.....it starts NOW, with ME and I am their EXAMPLE!

Split Pea Soup (clean eating and Vegan) MooMoo Jackson Style
⭐I bought all my ingredients ORGANIC
Ingredients: 1lb dry raw Split Peas (approx 2 cups) 4 long carrots peeled and chopped 4 celery ribs chopped 1 white onion chopped 5 garlic cloves minced
1 large bay leaf (to be removed before pureeing soup) 8-10 cups water (you can also use organic veggie OR chicken broth if you'd like to enhance the flavor even more) Pink Himalayan Salt to taste (be liberal) Black Pepper to taste Tad bit of Grapeseed Oil just to saute the veggies in
Instructions: 1) In a large soup pot, saute all the chopped veggies (except the peas) in a tad bit of grapeseed oil until tender. 2) Add the peas and water (or broth), place the lid semi on the pot (with a little opening) then bring to a boil on high heat. (I like to sort and rinse my split peas before adding them to my soup. I buy the pre-soaked, pre-rinsed, pre-sorted split peas so that is easier). 3) Boil on med/high heat for 15 minutes (with the lid still semi on the pot) then reduce the heat to low and simmer the soup for 30-45minutes until the peas are cooked and tender. 4) At this point add the salt and pepper and stir, REMOVE the bay leaf, then use a hand held immersion blender (I have the KitchenAid one from Target and LOVE IT) to puree the soup. (You can also pour the soup into a Vitamix, Food Processor, or strong blender to puree then pour back into the pot--it's just much easier and less messier to use the hand held immersion blender for soups). 5) After pureed let simmer on low for 5-10minutes to thicken a little. Taste it and add any more salt or pepper if needed then ENJOY!!
