Garlic Mashed Cauliflower (Clean Eating and Vegan)

Have you guys tried Garlic Mashed Cauliflower? It's a yummy low carb alternative! Clean eating and healthy! I'm telling you, you don't even miss the potatoes with this recipe! Try it!! I made some tonight and it follows my 21 day cleanse I'm doing called The Standard Process. I'm on day 14 and still going strong!! Let's keep being creative in the kitchen and enjoy our journey to health!!

You don't have to be doing a cleanse or following a specific food list to make these!

Here's how I make mine:

Garlic Mashed Cauliflower MooMoo Jackson Style

Ingredients: 1 bag of fresh Cauliflower (approx 16oz or 2 fresh heads chopped) 32oz box of organic low sodium Chicken Broth (or Vegetable broth for Vegan) 1 tablespoon Kerrygold butter 3 Garlic cloves minced Pink Himalayan Salt to taste Black Pepper to taste Chives for top

Instructions: 1) Boil the cauliflower in the chicken broth until it's soft (approx 8-10mins). 2) Strain the cooked cauliflower (KEEP THE BROTH FOR OTHER THINGS...I LIKE TO COOK MY BROWN RICE OR QUINOA WITH IT)! 3) Add the butter and seasonings to the cauliflower ⭐(if you want to saute the minced garlic so it's not raw feel free to do that in a separate pan before adding it to the cauliflower)⭐ and mash it all together with a fork until it's mashed potato consistency then top with chives and ENJOY!
