Lentils "Beefy" Crumble (Clean Eating & Vegan)
I've been loving making things with LENTILS! Believe it or not, 3 weeks ago when I first started my 21 day cleanse called The Standard Process, was the FIRST time I bought, cooked, or experimented with lentils! They are tasty and fun! I haven't been eating meat for the past 26 days and lentils has been one of my proteins. Anyone can make this! It's clean eating, nutritious, VEGAN, and yummy!! This is how I make my Lentils "Beefy" Crumble and I use it like you would use ground beef or ground turkey/chicken. It's even good COLD on salads! It's good in tacos, wraps, lettuce cups, over brown rice or quinoa, and the sky's the limit!

Lentils "Beefy" Crumble (Clean Eating & Vegan) MooMoo Jackson Style
Ingredients: •1 cup dry raw Lentils •3 cups organic Vegetable broth [to cook the lentils in] (you can use organic Chicken Broth if you're not eating Vegan or even water but broth gives it more flavor) •1/2 white onion diced small •2 carrots peeled and diced small •4 garlic cloves minced •1 small head of cauliflower chopped small •3 celery ribs chopped small •1 handful fresh Spinach chopped •1 tbsp Grapeseed oil (or one full organic, free range raw egg if you aren't eating Vegan) •1/3 cup Brown Rice, Quinoa, or oat flour (you can simply grind your own brown rice, quinoa, or oat flour in a Vitamix or food processor until it's flour consistency)
"Beefy" Crumble Seasoning Ingredients: •Pink Himalayan Salt to taste •Black Pepper to taste •2 tsp Garlic Powder •1 tbsp dried Parsley flakes •1 tbsp dried Oregano •1 tbsp dried Basil •Crushed red pepper flakes to taste (optional)
Instructions: 1) Place the lentils in a sauce pan in the 3 cups of Veggie broth and bring to a boil on high heat. Once it's boiling cover the pot partially with the lid and let it boil on medium heat until most of the liquid is absorbed and the lentils are tender but not mushy (approx 12-15mins). 2) Let the cooked lentils cool. 3) While they are cooling, saute all the chopped veggies listed in a tad bit of Grapeseed oil until tender then let them cool. 4) Combine the cooked lentils and veggies, all the seasonings, the brown rice flour and 1 tbsp of Grapeseed oil (or a full egg if you're not eating Vegan. Stir everything together well. 5) Using either an immersion hand held blender, or a food processor, blend the mixture until it's lumpy but NOT smooth consistency (you want some texture in this mixture). 6) Dump the lentils mixture into a frying pan in a tad bit of Grapeseed oil and cook it like you would brown ground beef/turkey. I like mine pretty well done so I cook kit until it's crispy.
